The resort is big and very pretty! The restaurants we tried asked about the allergy upfront and the waiters can tell you what food has gluten. The concierge gave me a letter explaining the gluten allergy to give at the restaurants. Only used once, as they normally ask about allergies ahead of time. I felt very well treated from the start and was surprised that I could have a full course meal. Even dessert! I had a crème brûle that was amazing at La Hacienda. Tacos had corn tortilla. The room service was great too. All I had to do was mention I wanted something gluten free and if I ordered something with gluten, they would call the room to inform and offer other options that were safe. At the buffet they label what allergens are in each food. In general the servers can help you but you will always be the best advocate for yourself & your allergy. Learn how to say/ask basic stuff related to gluten allergy. Language was not a barrier for me and that definitely helped.
