This is a New York style pizza place and the owner has a family member who is Celiac. He makes the crust from scratch and goes into the back, changes into protective clothes and gloves to avoid any cross contamination with the regular flour. This pizza bends and folds like regular pizza. When I got it home I couldn’t tell which one was mine and which one was my husbands regular crust pizza. It is that much like a real crust. They are new and the owner seems very accommodating.
