Super lovely place with good food. Vegetarian and gluten free. However, they do state they have the option to make a few items with gluten (e.g. add gluten bread). They assured us that they do it in a way that guarantees no cross contamination.

Update : since very recent (dec 2023) Gys is 100% dedicated GF!

Gys is 1 out of 3 places in Utrecht were I come. (2others are dedicated).
For lunch/diner I come by far mostly to Gys because of the combo for easy dairyfree (total/mostly vegan) menu and ambiance.
Also cake (vegan&GF), kids love pancakes (vegan&GF).
Mostly Amsterdamsestraatweg location because of the parking.
Been here a lot, even in pregnancy when extra sensitive. Never any problems.
They do remind you that they use bread in the kitchen, (the only gluten they have) but i have been good always.

Nothing but bad experiences here, claims to have gluten free options but I question how careful they are with cross contamination.
Quality has taken a massive dip as well, at least the food was alright the first time I ate here (even though I got sick afterwards) but after giving them the benefit of the doubt and trying again recently (which, admittedly, is a bit stupid after getting sick once already) the food was terrible.
They still mark the food as gluten free, but as stated before I don't know what goes on in their kitchen. Judging by how sick I've gotten after eating here it can't be anything good.
I wouldn't recommend this place to anyone that eats gluten free, nor would I recommend it to people that don't.

In essence, all dishes on the menu of Gys are gluten-free. The only dishes that are not gluten-free in principle, are those dishes that are served with bread. This is because our bread dishes are by default served with sourdough (non-gluten-free) bread. However, the toppings of our bread dishes are gluten-free. As we also have gluten-free bread in-house as an alternative, we can prepare these bread dishes gluten-free for people who can tolerate any traces of gluten.
So what distinguishes a gluten-free from a non-gluten-free dish is the bread. Since we also process non-gluten-free bread in our Gys kitchen, we cannot claim that we have an allergen-free kitchen. Because our non-gluten-free bread is baked in the same convection oven in which other ingredients for our dishes are prepared, our food may contain traces of gluten.
Every person knows his or her allergy or illness best and is aware of what is or is not possible within this. At Gys we find it very important that our guests eat safely in our restaurant, therefore we want to be open and transparent about the preparation of our dishes. This allows our guests with a gluten intolerance, allergy or celiac disease to decide for themselves what can or cannot be eaten.
Gluten-free food at Gys with celiac disease
There are several dishes on our menu for which the ingredients are not prepared in the oven. These are the safer choices for people with celiac disease or those who cannot consume products from a convection oven in which non-gluten-free bread is also prepared. These are a number of snacks (we don't fry anything that is not gluten-free), cold dishes, soup or a main course.
At Gys we take every allergy or illness very seriously and will always do our utmost best to prepare dishes safely for our guests (washing hands, using clean cooking utensils, wiping off the countertop etcetera). Unfortunately, it is not possible, even though we would like to, to guarantee 100% that our dishes contain no traces of gluten.

Everything can be gluten free. They also have an allergen chart which shows what is likely to have cross contamination and what is more likely to be celiac safe.
Unfortunately about 5 minutes after leaving, I experienced the tell tale signs of a gluten-ing. Very unfortunate as it seemed like such a nice spot.

Before my visit I got in contact with Gys about my dietary restrictions since I am celiac (gluten-free) and intolerant to lactose, onion, garlic, and others. They were super understanding and patient and tried to offer multiple options of preparing a safe meal for me.
During my visit I also felt they were very much willing to accommodate my needs. The waiter always made sure the food I requested could be prepared in a gluten-free way.
The food was really delicious and always looked amazing. I'll for sure come back and I totally recommend it to anyone passing by Utrecht!

Got very sick after eating here. They claim GF is no problem but I think they're not so strict when it comes to cross contamination. Will never eat here again.
