When I called later, the manager explained that they read my reservation note and they had already been preparing for me. The waitress was as knowledgeable about Celiac disease as one can expect, and she always confirmed any questions with the chef, who clearly understood the situation. I appreciated when I was asked if it was okay to have a specific lemon juice added to my cocktail, because while the lemon juice did not have any gluten ingredients it was also not labelled gluten free. I was able to enjoy a delicious meal out, and I felt safe and did not get sick.
