Just ask for gluten free alternatives (instead of shrimp tempura ask for your fav fish)
They have gluten free soy sauce and the spicy Mayo is gluten free (just siracha and Mayo)
Research what things normally have gluten in sushi restaurants before going and you will be safe as long as you let them know of your “allergy” (Celiac disease)! They’ll wash their hands and clean the area. (no tempura or fried, fake crab is not usually gluten free, nothing with soy sauce & you should be good)
