I was excited to try the Tonkotsu ramen and tried both Ramen Hidechan in Canal city location and this Hidechan Ramen near Ohori park. This one in Kego had a menu saying gluten-free noodle which I believe comes from the same packets I buy at the Aeon store. Because I got lazy in my communication, I did not confirm that they would leave out the soy sauce with gluten. I also don’t know (but suspect) the noodles were cooked with other gluten containing noodles. Again, I might have tried to confirm but didn’t. I had no adverse effects and Tonkotsu was tasty but the noodles were a bit starchy and didn’t slurp as well as tofu noodles I tried at a different shop. Still, I was happy with a gluten-free ramen noodle option and tasty broth. I loved the added egg and also that I could order a second helping of noodles to continue with my broth.
