This was a nifty Japanese restaurant in downtown Evanston. We asked if the bowls could be made gluten free, and the waitress said they could and that they would sub out the regular noodles for rice noodles. My friend and I split a tantanmen ramen bowl, and it was delicious!
I can't speak to what safety measures they take for cross-contamination, as I did not ask.
They have a veggie ramen, and most or all of the menu should be dairy free.
