Chef is very concious about contamination. Fries are not gluten-free because of other things that are fried in the same oil, but if you have coeliac disease, they will make yours in a small fryer where they only do fries. They offer penne and spaghetti with different sauces. For pizza, you have to reserve 48h in advance.
