The restaurant follows rules of AIC (Italian association of celiacs) since 2016. They have a GF menu, very close to "normal" menu, except some dishes.
The breakfast is safe too : GF products are separated and clearly reserved for celiacs and the staff give us GF breads which come directly from the kitchen (not available at the buffet).
I spent 4 nights in the hotel, so 4 breakfasts and 4 dinners : all was perfect and safe.
