Staff knowledgeable about GF food, all marked on menu what is GF or not. You order via a QR code on the table, so it's worthwhile adding a note to your order or making sure the waiter communicates to the kitchen staff to be 100% safe- I've never had any issues with asking them to double check. The food comes out on separate platters (e.g. vegetable or meat selection, tofu, additional toppings like garlic or chilli sauce) which you add to a broth pot in the centre of the table to cook. Make sure to go with friends who understand cross contamination or order your own individual broth pot!
