I recently stayed at the Iberostar Paraiso Maya Suites in Cancún and the experience was overall fantastic. You can request an allergy card from the Concierge upon your arrival. When you go to one of the buffets you tell the hostess that you have an allergy and your card is given to a wait staff who then brings you to the chef who personally walks you around the buffet and lets you know what you can and can’t eat. Each of the sit down restaurants had at least one gluten-free option in each of the appetizer/main course/dessert categories. They had gluten free bread in the Steakhouse, gluten free soy sauce in the Japanese/Hibachi restaurant, and gluten free pasta at the Italian, etc. The moment you walk into one of the restaurants, you are asked if you have any allergies and again you can present your allergy card. I would recommend reiterating that you can’t eat gluten to each member of the team that you meet and always double check that everything is gluten free just to be extra safe. That being said I never had a single reaction to anything and I’m very sensitive. It was a huge weight off my shoulders to be able to have a variety of food options available on vacation!!
