GF marked dishes (particularly starters) do use soy sauce because it „tastes better“ according to the waitress. Still had a lunch there after clearing details with the staff.

Highly recommend, but Coeliacs please be careful here and talk to the owner, Ketut, before ordering. As with everywhere in Asia, seeing something marked gf on a menu does not necessarily mean gf because of the misunderstandings around soy sauce, hoisin sauce, etc, which most places assume are gf.
I discovered that at least three dishes marked gf on the menu were not actually gf (peanut sate has non-gf soy sauce in it, soba noodle dish has wheat in the noodles, like also soba noodles, and pork belly dish has non-gf hoisin. All likely quite low gluten and likely safe for non-coeliacs.
Spoke with the owner, Ketut and he was horrified and effusively apologetic that I had gotten sick the day before from unknowing eating soy sauce in the peanut sate sauce, and he went back and forth with the kitchen double checking every single ingredient with me for our second meal, which he gave us free of charge as an apology. Second time round I had sate skewers with sweet chilli sauce (delicious even without the peanut sauce), the pork belly with sweet chilli sauce instead of hoisin, and smashed potatoes. (Note that these are deep fried, so cross contamination is a possibility). All so so delicious, the best gf meal I’ve had in bali for sure, and I felt in very safe hands with how Ketut handled it.
Ketut was super helpful and open to feedback on menu items, he listed every single ingredient in the dishes, (he speaks fluent English) and took photos of the sauce and ingredient labels for me, and together we used my Indonesian coeliac card to work out which ingredients were gf and not. They do have gluten free tamari.
Ketut assured me the kitchen was going to start using the gf tamari they have in the peanut sate from now on to make it fully gf, and change the other menu items to make sure they are fully gf. (As of today - 10th July 2022). I would feel safe eating here in future as a coeliac so long as you double check the menu updates/ ingredients with Ketut, who is now much more informed about gluten.

We have tried the Thai salad with Pork belly and Smashed potatoes, all GF and really tasty!
I had only the starters, summer rolls (vegan) with no soya sauce and chicken satay skewers with own made peanut sauce (no soy sauce). There are a couple of main available, fish and meat. Nice place.
