Very small restaurant, just one chef and one waitress. Reservations essential. First time I went I had edamame, sashimi and a soy cream yosenabe hotpot (as I was told this was the only GF hotpot) It was absolutely delicious. There were also other options such as grilled fish. After the meal I asked to reserve a table again for a few days later and he told me that he would prepare a special GF Tom Yum hotpot especially for me so I didn’t have to have the same meal again (there is a Tom Yum hotpot on the menu but I believe it is not usually gluten free) The japanese chef spoke basic English but clearly had an understanding of gluten allergy and they even had a bottle of GF soy sauce for the sashimi. Will definitely come back next time I’m in Hakuba.

Very small 8 seat Izakaya where one man does all the cooking. Reservations essential. Had Sashimi and Tom Yung Hot Pot. He seemed to have an understanding of wheat allergy/GF. Not particularly sensitive to CC so did not query that much. Food was delicious!
Sukiyaki and Shabu Shabu were not GF.
