Delicious food! Due to widespread usage of soy sauce and shared fryers, there wasn’t actually much I could eat. The staff I interacted with were aware of the risks with celiac disease, and warn against shared cutting surfaces, but made efforts such as bringing a bottle of tamari. The more ingredient-focused sushi options are GF (Hawaiian roll, tuna), as well as the edamame, nattō with tuna, and plain rice. Stay away from anything fried, as well as miso soup and ramen.
