I have been to a couple of different Jersey Mike’s several times and the protocol seems to be the same: wipe down area and equipment, change gloves, paper under gf bread, special knife, etc. I’ve never been sick after eating their sandwiches.

Very very impressed with the workers actually caring and making a great effort to prepare my food. Watched her wipe everything down and the other workers being extremely cautious and careful.

Apparently, all the local gluten free places (which are excellent!) are closed on Mondays. So I decided to give Jersey Mike's a try. The bread is kept wrapped. The whole loaf looked factory sealed, but even the half loaf was wrapped. The employee asked if it was an allergy, When I told him I am celiac and required any allergen protocols they had, he changed gloves and wiped down the slicer. Another employee was waiting to top my sub, but the first employee reminded him that he had just handled a gluten sub. The second employee responded that he had already changed his gloves. My assessment is that the employees are generally well-trained in costumer service and allergy protocols.
That being said, there is still a risk of contamination. I do not know how the block of meat was handled before I came in. They did not open new containers of toppings (and I just realized that it didn't even occur to me to ask: beware of gluten-vigilance fatigue, especially when hungry!). I also do not have noticeable reactions to gluten, so I will not be able to tell if I have a reaction.
Overall, I was satisfied with their precautions and will be adding this to my list of "safe" chains to look for when traveling away from my trusted stand-bys.

I was in town for work and everyone ordered together. I called ahead and stressed that I needed gluten free and dairy free. I asked them to add bacon. My sandwich was delivered with cheese melted all over the contents. No bacon. I didn’t have lunch.

My experience at Jersey Mike’s was good I have celiacs and I have eaten at several even in California never had a reaction and I do have to carry a epi pen because my reaction is swelling of eyes, mouth and throat.
Love the separate prep area.
