My daughter and I both have Celiac and we love the pho at Koba. It seems that the prep process for pho there is safer from cross-contamination than other restaurants (but they are not a dedicated gf restaurant).
Just watch the sauces on the side. Their hoisin is NOT gluten-free. Also, I don't think the the meatball option is gf, but I have not verified. We've tried the steak and brisket pho, which are delicious. Be aware they serve the steak raw, which is the authentic way. You're supposed to pour your very hot broth over (microwave it if you're taking it home) to cook the steak.
They also have other gf options. The shrimp summer roll is gf (I don't think the peanut sauce is gf), and the vermicelli noodles and meat are gf, but tell them your dietary needs and that you can't eat the egg roll. Also talk to them about the sauces they put on your meat for the platters. I think some of those sauces have soy sauce with wheat.
I don't believe their Korean dishes are gf. I haven't asked about the bubble tea or other drinks.
