Stayed at the coral estates resort and both restaurants (Koraal and Karakter and the cafe had GF options and a knowledgeable staff. They have GF bread but can run out.

Koraal Rooftop Terrace was the first place I ate at on the island. Having Celiac Disease and being in a new country I was a bit nervous, however the waitress was aware of my allergy after using a few buzz words like gluten free, allergic to wheat, and allergic to bread. I ordered from the decently sized list of hamburgers after being told they have gluten free buns. I was substituted a salad instead of fries, there is no dedicated GF frier. All things considered it was a delicious meal, a little pricey but I was not charged extra for my GF bun.
I did not experience any symptoms of being “glutened” after eating.
