No GF soy sauce and I found the allergens menu hard to navigate. Good for the ‘fun’ factor but not for the food. A few options but not many!
No real info about allergy in store, but had a look at the website for the info about wheat. Bit scary re other potential sources of gluten. No gluten free soy sauce The stuff I had was tasty though.
It’s a fun revolving sushi restaurant where you can order from a screen at your seat. We didn’t see any indication of gluten free items marked on the order screen but there is an allergy page on the Japan version of their site which allows you to check before ordering wheat free items. The selection is much reduced but there are items in each areas of the menu. There gluten free soy sauce available too.

I won't promise anything about the sushi being glutenfree bjt they did have pamplets woth allergi information if asked for.
Although they hade a chocolate cake that where both gluten and dairy free, 5/5 sakes if you'd ask me.
