Fast and tasty! Omelettes were done in 5 min- before our drinks came. Lol. No crowds or lines, only 2 other tables of People since France just re-opened to tourists after Covid. This place was mentioned in my LP guide as a must-have omelette that is cooked in a fire. The book says it’s not cheap, but I’m happy I get to try the cool recommended food for once while traveling! And you can watch him cook it and it doesn’t look like any bread or flour, etc is anywhere, so I asked about gf. The chef who was right at the fire cooking spoke a bit of English and said the Omelettes only have egg and butter. If you get the sweet one it has sugar (and apples andcinnamon?). The savory one is served with salad with vinaigrette. No bread or croutons or superfluous toppings. So we had it and it was an unique foamy texture and tasty, light omelette. We each got one and shared, since they are both gf. There is a (clean) bathroom upstairs since this place is also a hotel.
