The classic Panzerotto (tomato + mozzarella) is available glutenfree. They Fry it seperatly. It looks different as the normal ones but it is really nice to try!

They offer a gluten free panzerotto (mozarella and tomato sauce) which was fryed separately. Pity that they don’t offer more flavours, but I was very happy I found anything like this gf!

This shop sells “panzerotti”, which are savory turnovers deep fried, resembling calzones. I found myself in Polignano a Mare super hungry having missed lunch, and stumbled into this spot hoping I could find something gluten free — in talking to the hostess, I misunderstood her explanation and thought I was ordering a plate of plain tomatoes and mozzarella. So I was thrilled when she came out a few minutes later with a special gluten free panzerotto, filled with tomato sauce and mozzarella. It was cooked in a separate fryer in the back and it was super tasty. I highly recommend!c
