Had a short window in Florence between trains and came here for a quick bite. When I said I was gf and it was an allergy they told me not to eat there because all the food is prepared in the same small space and seemingly on the same cutting boards. I appreciate that they warned me so I could go elsewhere.
The waiter was nice enough to let me know that there is cross contamination in the oven, therefore it is not safe for celiacs

It took a bit to find inside the market but it’s upstairs! I was a little nervous because of the chaos of the place, but it seemed one person was dedicated to working on our order and the chef himself handed it out because he knew which order was the GF one. Just grabbed a few sandwiches as we ran to the train and they were delicious. No issues.

Went to this place for all the good reviews I've read here, but my impression is divided. They have a great variety of GF sandwiches that is definitely true, and the food is tasty. But I was quite shocked by the prices and the amount offered for the same. I have paid 16 EUR for an average size panino, with cheese and meat cuts. +6 EUR only for the some 80g of GF bread. In a place just next to this, my friends got double size sandwiches for 6 eur each. Now, I understand that it takes special care to produce GF portions, but this was ridiculous. Few more EUR and I could have gone to a restaurant.

Don't go to the place downstairs as they don't have GF. This place is upstairs at the Mercato Centrale and they were thoroughly over everything. Washed the cutting boards, put paper down on the baking tray and double checked the ingredients. It was a few Euros more but worth it for the piece of mind. The sandwich I ordered was 10/10.

Delicious fresh authentic Italian focaccia. All of the menu options can be made gluten free. Attentive chef who changed his gloves, used fresh ingredients and was extremely thorough in avoiding cross contamination. This was worth every cent!

This is one of the stalls in the Mercato centrale food hall. Gluten free clearly marked and said they could do all their sandwiches with the gf focaccia. It was €14 (compared to €9-12.50 for everything else) but they gave me two and it was absolutely delicious. They changed their gloves to make it and took real care making it. Would recommend.
