I asked my server about celiac safe food and the manager came out. He had a list of ingredients and answered all my questions. I ended up getting a cheese enchilada and cheese dip (with corn tortillas). They even tried to bake the tortillas instead of frying because they have a shared fryer, but it didn't really work. But I appreciated them trying! Very easy to ask about it and I've had the cheese enchilada a few times never with issues.
