I let the waitress know I have celiac and she let me know that I am not their only customer with it and they know the protocol. The only fried food going into the fryer is French fries, so those are safe. I had the duck confit and the waitress verified the sauce did not contain gluten. Since I was there for my bday, they even supplied a gluten free complimentary dessert!
