Not sure how aware they are of gluten-free. But, I have celiac, and I have eaten here (takeout) semi-regularly for years with no issues since I stick to things that should be safe. I order the salmon-and-avocado roll, the hamachi maki (yellowtail and scallion), Hawaii roll (Salmon, avo cucumber topped with salmon, avo and mango), and philadelphia roll (if you want to be even safer you could avoid this one in case they change to a different brand of smoked salmon in the future). I have tried the wasabi they have and not have issues, though I read online some brands of wasabi might not be safe (and I guess they could change to a new brand of wasabi at any time). As always, glance over your food before you eat it to make sure there are no visible signs of the most egregious/obvious cross-contam (ie, no crumbs on your food). But I suspect you should be good to eat here. (Do not eat the soy sauce in the packet unless it specifically says gluten free; many soy sauces have wheat as their primary ingredient).
