On safety—We take all necessary steps to prevent cross-contamination, however there is always a small risk of it because we do also make non-gluten free items in our kitchen. All gluten free pastries are baked separately and stored in separate containers from gluten-containing pastries, and our staff are trained to always switch out gloves in between handling non-gluten free and gluten-free items.
