Madrid Taverna recently added more tasty gluten free options recently, including gluten free bread. We have enjoyed many of the new options recently with no issues. I agree that most of the staff is not very knowledgeable so you do have to ask them to make sure that the chef knows your food needs to be gluten free or ask to speak to the manager so he can inform the chef. Also remind them any bread on or in the dish needs to be GF.

The Madrid Spanish Taverna has a lot of gluten free options on the menu. I was so excited to finally have some Montaditos, which I never get to do!
However, even though I put my allergy on the reservation, and I went back and forth with the waiter about the gf option (he bizarrely told me that gluten free means they do it without the bread, so I had to say, it costs $2 extra to make it without bread? This should have been a sign)
I noticed about two bites in that my stomach very much disagreed I was given a gf product.
So all that is to say, lots of options but you are really taking your safety into your hands with the staff.
