After informing the waiter that I had Celiac Disease and what I could not eat, he was careful to inform the cooks. They made my dish special without any flour to thicken the sauce and without any extra ingredients in the sauce. He was also careful to steer me away from rice that had been made with soy sauce. I brought my own GF soy sauce and they were fine with that. I ate without getting sick and had a great experience.
