I thought it was going to be hard because the menu has all allergens listed and there was 2 things without wheat. A roast beef salad and grilled beef skewer. But actually most of the wheat is from soy sauce so we got a sashimi plate, rice, salad and it was great. The sashimi was amazing and I ate it with ginger and wasabi. There was a citrus sauce too that came and did not have soy. So in the end lovely. I think it is a fairly safe place bifold is carefully handled and there aren’t any menu items with flour. Mostly the marinades and sauces are the issue.

This restaurant has allergens marked on the menu, including wheat. At first glance there was nothing to eat, but I managed to get the staff to make me a beef and rice bowl with just salt and pepper, which when combined with my own gf soy sauce, was delicious. However, I managed to get this done in Japanese - not sure about the staff’s English level.
