The store does offer gluten free bread. Cross contamination seems that it could be an issue for anyone that is particularly sensitive. Note that the gluten free bread is half the size of their regular sub rolls. They do not just add the regular amount of meat on the smaller slices of bread. If anything, the offering of meat is even less than half of a regular sized sandwich. This was perhaps the most expensive basic sandwich with one slice of meat and one slice of cheese I’ve ever had. The lady sitting next to me had the same sandwich on the standard sub roll. It was loaded with meat. We actually compared the sizes and she was astonished as well. The food wasn’t bad. It was just a bit of a rip-off. We ended up getting better food for less at the Los Robles pupusa restaurant next door.

This is such a wonderful place to stop for breakfast or lunch on our way to SNP. They offer gluten free bread to use with breakfast sandwiches and lunch! The breakfast sandwiches appear to be toasted on a panini press, so you may need to inquire on if they have a separate one or if they can wipe down before grilling your sandwich. I don't typically have reactions related to cross contamination and have never had an issue getting grilled sandwiches from here. They sometimes offer gf muffins and other little desserts. They have delightful outdoor seating on nice days, and their coffees are absolutely delicious!
