They need to change gloves, use clean knives, use a clean surface. Ask for condiments in to-go packages (e.g. mayo) because they are not 100% confident their condiments aren’t contaminated with gluten. Some of the types of cheese are stored in recycled gluten bread bags. The gluten free bread is baked in a mixed bakery, although they do bake it first in the mornings to reduce cross contamination. Some of the staff is very knowledgeable and others are totally uninformed. If you can’t advocate strongly and don’t know about the cheese types, condiments, this is a very risky place to eat.
You can get any sandwich made on a gluten free bread, but risk of cross contamination in sandwich production is significant.
Wonderful local chain, employees lots of local young people, great community feeling, very popular with capitol campus employees so try to stagger your lunch time around their schedules if you can.
