A few good GF options, including gluten free buns. You can talk with the chefs personally. They were receptive. They didn’t necessarily know to do more than change gloves so be very explicit (e.g., use clean vegetables from the fridge that haven’t been contaminated, clean utensils) but once I gave them clear instructions they did it just fine and I didn’t get sick!
