So they didn’t really know what celiac was…. It was a little strange. The chef came out to talk to me. Somehow she got in her mind that soy had gluten and I tried to tell her it didn’t. They told me the seaweed paper and sushi rice had gluten, which I’m like 90% sure does not because I have had it before and been fine. They made my sushi with plain white rice and soy paper (witch they charged a dollar extra per roll for). I appreciate that they were super careful, but I think their knowledge on gluten was lacking. They also made me a fried rice, but without any sauce, which again they could use gluten free soy sauce, but whatever. They gave me gluten free soy sauce to use which was nice.with all the modifications they suggested it was not really the best sushi I have ever had. The plain white rice they made it with was warm, so that was kinda unpleasant. And with the plain white rice and soy paper the sushi had no integrity and fell apart.I mean they tried really hard, but I don’t think they really understood what gluten and celiac is.
