I love Morning Glory! Most of their menu is gluten free and the owner definitely cares about accommodating those with celiac. I don’t know what they’re doing with their pancakes, but the first time I got them they were so good I felt like I needed to double check that they were indeed gf (I found out in fact, they ONLY make gf pancakes so clearly they’re good enough for the gluten eaters too!).
While I have had only good experiences here I’m not sure that the waitstaff 100% understand what’s what. Whenever I’ve asked, they’ve said that their kitchen is completely gluten free and that they just have a toaster out front for the waiters to add regular gluten bread when the food comes out if the plate is supposed to have it. That doesn’t quite make sense to me because they also have stuff like burritos and quesadillas with regular or gf tortillas and I doubt the waitstaff is warming the gluten tortillas and wrapping up the burritos outside of the kitchen too?
Anyway, even if the waitstaff is not super informed the kitchen clearly has separate surfaces and the people in it know what they’re doing because I have eaten here many times and not been sick. Their menu is also very clear for other dietary restrictions with labeling around dairy, nuts, and vegan/vegetarian.
