I don’t k ow their protocols but I’ve gone for years with no problem. Staff is very knowledgeable.
Seriously still my favorite in Dallas! Maybe 50% of the menu at most is marked on the gf menu, but ask again because some others can be modified. Whatever you get will be delicious! Great pho, salads, the tuna appetizer is awesome and can be made gf, veggies, seafood. All super delicious. Prices are a bit high, but it’s worth it for the food and ambience.
One of the best places in Dallas! Mostly gf and they know how to take care of you. Charming interior. The banana flower salad is great! I love the bon bo hue (sp?), which is a soup with a thick rice noodle. Also the veggie pho is really good. I prefer lunch here to dinner.

Food is definitely not worth the price. Not as many gluten freee options as I would like.
They have a gluten free menu. The items on the gluten free menu: grilled duck hearts, black truffle and baby collard green spring rolls, banana leaf grouper, lamb neck, jasmine rice, vermicelli rice noodles , green papaya salad, blue crab salad, coconut-lemongrass panna cotta with peanut crumble and raspberry sorbet, and selection of sorbets and ice creams.
Ask the server for her homemade GF menu. It turns out Vietnamese food is naturally GF. There were only about two items we couldn't eat. This is not your local Chinese buffet. The chefs went to Vietnam to learn authentic cooking. Some of the best food I've ever eaten hands down. Note this is high quality and not cheap.
