How can a dedicated gluten-free bakery have Rye Bread on their menu?

CLARIFICATION: Nice to get a quick response to the Rye bread issue. Because I am Celiac and have other food allergies, I review every menu for every restaurant/bakery I visit in advance and if it passes the first critique, I then call to discuss my needs. I've been burned and sickened too much to trust anyone. I appreciate the response from this bakery, but I suggest they clarify on their menu that it is Mock Rye. If I had not posted this question, I would have simply avoided the place entirely. You can never have too much information when dealing with Celiac disease. I will give them 4 stars until I get a chance to visit.
