If you are attending a conference here, bring your own food. After speaking with the dining manager of an event I attended, it doesn't appear that the staff is educated on celiac. They understand basic gluten-free, but he looked at me like I was a little crazy to refuse the salad dressing. I couldn't get a straight answer about cross-contamination protocol. I opted for a salad with no dressing, just fresh lemon wedges. They brought out lettuce tomatoes and corn. It's 4 hours later and I have twinge of discomfort. I hope it stays at that way.
