I have stage VI celiac disease (extremely sensitive to cross contamination) and at Osaka, if I emphasize keine soja sauce (no soy sauce) and make sure my sushi is on a separate plate from anyone elses I can safely eat the Ikura nigiri, salmon roll, and tuna rolls.
