Poke bowl places are great for celiacs! You can watch your bowl being made and talk to the person who's making it, they usually use fresh tools and bowls for each guest, and typically most (but not all) of the ingredients are GF. Exceptions: soy sauce (obviously), both types of fish eggs (bc soy sauce), some of the sauces (because again, soy sauce). Staff and owner were super-nice (we might have been their first celiac folks) -- helpful, interested, sympathetic, and happy to pull out boxes and bottles so we could check labels. ("Don't apologize -- we need to learn this stuff!" :D )
