I’ve only had my Celiac diagnosis for about a year and I’m very cautious about eating out. That said, I love matar paneer and it’s one thing that I’ve struggled to find safely elsewhere. After a good chat with their kitchen, they assured me that I could call anytime and request they use “fresh cheese” instead of fried cheese and it would be safely gluten free as their frier is shared with glutenous items. I regularly order matar paneer with fresh cheese and have never been sick. That said, I’ve hesitated to order anything else from the menu since there may be more risk of gluten contamination. It’s a small business though and I do think they’d do everything they could to make things safely when asked.
