The wait staff is very familiar with their extensive menu. They know which items are OK or can be made OK. Example - on my most recent visit, the server knew that the sweet potato dollop served with the grouper entree contains gluten while the rice and the vegetable are OK visit. On prior visits, the server has gone to the kitchen to make sure something is OK or can be made OK.
