I have a paragraph of instructions in English and Spanish that I use - talks about seasonings, sauces, cross-contamination etc that seems to really help the chefs. I also use a Nima sensor to test food. They have gluten free bread, gluten free spaghetti noodles (but sauce had gluten so I got with butter), and they will make eggs to order. The Mexican restaurant Frida struggled but finally got the beef to text negative for gluten.

If you are an English speaker, it would be very hard to eat safely here. Only 1/2 the staff speaks English, so it’s been challenging to sort out what is safe. They do have a delicious gluten free pasta and pancakes they are willing to make to order. Thankfully my daughter isn’t very sensitive, as I fear many things were cross contaminated. (She was only diagnosed a month ago, and the trip was already booked).

The staff has been very helpful. The chef has walked me through what is safe to eat at the buffets. The Mexican restaurant is phenomenal with staff that knows the allergens in each item. Thanks to both Enriques.
