I don’t get an immediate reaction to cross contamination so I can’t speak to that, but the first waiter I had was very accommodating and knowledgeable. The duck is gluten free without the sauce or pancake and they brought me lettuce wraps and GF soy sauce to use instead. He must have left halfway through us eating so the other waiter brought out duck already in the pancake wraps and when I explained that I was supposed to get it without sauce/the pancake, he just took it out of the pancake wrap and brought it back 30 seconds later without the wrap but still with the sauce. So maybe it depends on the waiter but I just ended up eating steamed chicken and mixed vegetables.

Peking duck is usually made with malt sugar which is not GF. So be careful as many don’t realize that.
