Persona Wood Fired Pizzeria

This place is not gluten friendly and it's definitely not celiac friendly. They had regular flour all over the counters and even in the toppings. Would not recommend.

So good. So delicious. And *very* scary. They did their best mind you, changed gloves, cleaned off pizza paddles and wiped down glasses, used gluten free flour, were gracious and slow and accommodating. Here's the thing. They baked the pizza directly on the same oven surface as their other pizzas; "all the way to the left, where they only cook gluten free pizzas" as the kind gentleman explained to me. This doesn't make a Celiac feel any better about the situation; the oven opening is small, and all pizzas and paddles pass through and I can't imagine it's entirely free of contamination (that and ingredients on the prep line). I made the ill-advised decision to eat most of it (after taking two gluten enzymes) and while I feel no obvious ill effects, I'm guessing I will :/. It was amazing, incredible, delicious pizza. Fresh crust, not frozen. Wonderful employee doing what he could. But I can't recommend safe for Celiacs, not the way they made it today. Eat here if you can handle a tiny bit of contamination.
