No safety protocols, but the only things on the menu that have gluten as an ingredient are the two types of bread (pita and flat bread) and tabouli salad. The only thing they make in house is the salad. I even asked the owner to confirm that he that he doesn’t use any flour or gluten containing ingredients in the rest of the menu. I have a gluten allergy (hives, scratchy throat, intestinal issues) and have never had issues when avoiding the big three.
I love the food and the people that work there. Things are humble and accessible. Pricing is great for the food you get and service is pretty quick.
