Three staff members assured us there was no gluten in the pho. There is crab stick in the spring rolls, but you can ask for it to be made without it. I'd be cautious with the sauces and any spicy pho and always ask about the dish before ordering. They explained that they make their broth fresh without any additive ingredients like wheat or barley. I had the chicken pho (닭쌀국수) and it was delicious and filling. I added the dried chili flakes to make it spicy instead of using sauce. I took home leftovers and ate the broth with rice the next day, so it makes for two meals. I didn't have any reaction and it was really nice to be able to eat together with my friends.
