Review of Pieology

They have 2 different GF options for crusts. One is a cauliflower crust and the other is a regular GF thin crust. I am also dairy free and limited on meats (no red meat, no processed meat, etc.) and they have DF/vegan cheese as well as vegan meat substitutes for toppings! The staff had a separate wooden pizza thingy and cutting area dedicated to GF items. They were marked with a sign and I saw the cook use them from their area and put them back in their little box after using them to avoid contamination. Most of the cooking area is visible from the ordering line, so I feel that adds to the safety since they know customers can see them as they put items in and out of the pizza oven. The person who took my order let me know that the cauliflower crust is GF but not DF when I ordered dairy free on something else. They seemed knowledgeable and accommodating of dietary restrictions. And I was so excited to be able to eat pizza again!
