Went to Pilot Project Brewing for dinner, and was pleasantly surprised with their gluten protocols. Although the fryer is not dedicated, the bartender was able to direct me to safe foods for me to eat & made special notes for the kitchen to follow. They’ve recently brought bread & pizza crust into the facility that’s gluten free. Tried the Porchetta Flatbread on the cauliflower crust. Honestly it was the best cauliflower crust I’ve had since discovering I have celiac.
Only negative is the availability of gluten-free beverages, which was a Hibiscus Berry Hard Kombucha. Flavor was delicious, just wish I had additional options.
