Had a great sandwich with GF bun. Asked the waiter to change gloves and the guy preparing my sandwich changed gloves, used a disposable knife to cut it, and cleaned the prep area before making my sandwich. I was impressed with the measures they went through to help. However, I’m just gluten intolerant, so I ate the fries on the sandwich like they have because it was highly recommended to try this sandwich, even with cross contamination. So I risked it, but I understand not everyone can - so I would ask.
Gluten free options vary per Primanti Bros chain location. We called ahead asking if the restaurant had gluten free bread and they said yes! Upon arrival I mentioned my gluten allergies to the waitress and without skipping a beat she said they had gluten free bread and the fries were gluten free (bonus)! I asked about cross contamination and she said they toast the bread separately so they seem to have a good set up in the back. I ordered a pastrami and cheese sandwich which came on the standard GF white bread roll. Great bar to come with friends or coworkers and not have to worry so much! Oddly enough, there wasn't any mention of gluten free options on the menu. I guess that should be taken up with corporate.
