Their GF crust comes from Shambala Bakery, and it’s stored separately. The wait staff almost never has a clue, but all the cooks do. My husband has Celiac, we eat Proletariat regularly, and he’s never reacted to it.

Great dough, cool and laid back place. Luckily I'm not sensitive to cc so I can enjoy the tasty pizzas from time to time. Ordered a green salad once and it was pretty sad with lettuce past its prime. Sticking to just pizza from now on.

I was looking forward to getting a gf pizza but after asking a second waiter about how the pizza is prepared I decided I should pass. Would not recommend for celiacs. They did at least have a quinoa salad available that was gf, dairy free.

Great option for gluten-free pizza and they're known for the awesomeness of their regular pizza. The gluten-free dough actually tastes really good and isn't grainy like a lot of doughs can be.
