Two options for gf ramen noodles, either tofu or cabbage which are easily identifiable on the menu. Despite saying gf please ask the waitstaff to not use soy sauce, as I had to clarify with them when ordering. It also meant I couldn’t have an egg or beef in the ramen as they have soy sauce. I got the tofu noodles which were cooked really well and the broth was yummy too. Without the add ons though the ramen was pretty simple.

The two gluten free options are actually just shredded cabbage and tofu “noodles.” I didn’t try the cabbage version but the tofu version is pleasant enough, with a decent bite - a little the texture of overcooked pasta/noodles.

I was excited to try the Tonkotsu ramen and tried both Ramen Hidechan in Canal city location and Hidechan Ramen near Ohori park. This one in Canal city has a fun atmosphere on the fifth floor along with all the other Ramen shops. Staff helped me select from the vending machine the correct coupons to order both the tofu gluten-free noodle, and the cabbage-only version which is cut so thin, it feels like a noodle -but no noodles. Both were tasty, but I could not guarantee that they would leave out the soy sauce with gluten. I also don’t know (but suspect) the noodles would be cooked with other gluten containing noodles. I went back a second time since I had no adverse effects either time. The tofu was the tastiest noodle I’ve had in Ramen, but the cabbage was certainly a delight as well.

A ramen restaurant with gluten-free noodle options. Not sure about the soup and toppings. I had the tofu noodles, which were pretty good. They had a similar texture to real ramen noodles. The tonkotsu soup was a bit bland.
